a recipe for when all you want to eat is corn but “that’s not a meal” and “you need to eat real food” and “honey please i’m worried about you”
you will need:
1 cup small shells
1 cup frozen corn kernels
2 Tbsp butter
¼ cup crema
½ cup queso Chihuahua
2 Tbsp mayonesa (homemade mayo is fine as long as you use lime juice)
¼ cup cotija cheese
1 Tbsp tajin
cook your noodles as normal, but with corn. maybe like a minute longer because the corn lowers the temp of the water pretty bad. idk there’s not a lot to say here, if you don’t know how to boil a noodle i don’t think that’s my responsibility.
did draining the noodles and corn need to be its own step? no. did i want to show everyone this tacky piece of shit i bought? yes. did i almost dump my whole pot of carbs into the sink trying to take a picture and do this one-handed? also yes.
if you’re using an electric stove you can turn it off and just use residual heat. otherwise maybe just turn it as low as it’ll go without turning off entirely. i don’t know your stove situation. add the butter first so it’ll melt.
once that’s done add your crema and cheese.
stir until all the cheese has melted. this will not take long. after that you might want to take this off the heat entirely.
look. calm down. it’s just egg yolk and oil. it’s fine. would you even flinch if i said to add some aioli to this? no? then add your two tablespoons of mayo and chill.

here you can either move the whole thing to a serving bowl to make it look nice, or you can decide that you don’t care about aesthetics because you’re going to be cramming this into your gaping maw at top speed anyway so who gives a fuck.
after you’ve added your cotija and tajin, this will be the most aesthetically pleasing it will ever be. right? that looks fucking good. then you’re going to ruin it by stirring it because if you don’t then someone is going to get more cotija and that’s not fair and now everyone is trying to add more cheese to their bowl like we’re made of money and cheese grows on trees. there aren’t any pictures of this on a plate because i ate it too fast. anyway, enjoy.
